Oh hey, hold on just a second and let me wipe the crumbs off my laptop. Man, this is some good soup. I mean, let me tell you, this soup is an explosion of sheer pleasure in your mouth. Whoa, if eating healthy is this good why would anyone not want to. This is my go to soup. If I’m sick, move over chicken noodle soup, I want chicken and sausage.
This is a Mark Approved recipe. He absolutely loves it. He eats it until it’s gone. There’s no leftovers for freezing, so I’m not sure if it freezes well. But, tonight I’m going to put some in the freezer to see. I think it will, since there is no noodles which get mushy when reheated. Anyway, I found this recipe on Pinterest. Don’t you just love Pinterest! Mark wanted brussel sprouts, so I roasted some and he loved those but, he wanted them in a soup. So, off I went scouring the internet for a soup with brussel sprouts. Then I found it. And let me tell you, it is as easy as it is delicious. So, like I said, this recipe is supper easy. Here are the cast of characters.
First, I debone my rotisserie chicken and throw it in the crock pot. Then I slice my sausage and throw that in also. Next I chop my carrots, celery and onion, then go ahead and throw them in the pot. Now you can go ahead and toss in your baby brussel sprouts. Pour in about 8 cups of chicken broth. Gently stir in crushed red pepper, bay leaf, salt and pepper. Set your crock pot on high for 4 1/2 hours and let that baby simmer. Easy, Peasy, Lemon Squizzy!
Chicken & Sausage Soup
- 2 cups of baby brussel sprouts
- 3 stalks of carrots, chopped
- 4 stalks of celery, chopped
- 1 package of sausage, sliced
- 1 rotisserie chicken, deboned
- 1 medium onion, chopped
- 8 cups low sodium chicken broth
- 1 bay leaf
- 1 tsp. crushed red pepper
- salt and pepper to taste
- Place vegetables, chicken, and sausage in basin of crock pot. Pour in the broth. Add crushed red pepper, salt and pepper. Stir well.
- Set crock pot to high and cook for 4 1/2 hours. Serve with your favorite bread.
